Arrowhead is a 1' to 3' tall native perennial wetland plant. The plant most commonly grows in shallow standing water, wet muddy banks or flats in sloughs, swamps, and around ponds and streams in full sun. The arrowhead shaped leaves and flowers are produced on separate stalks. Three-petaled white flowers are in multiple whorls. Arrowhead is used in bog gardens, water features, pond edges, and in wetland restoration. The rhizome are used respectively by the North American Indians as starchy foods. The matured tuber flesh is cream colored and is eaten boiled, baked or fried as chips. The protein content of 4 to 7% is high for a root crop. The young shoots can also be eaten. They grow just below the surface of the mud.
Winter hardy to USDA Zones 5-10. Needs full sun for best flowering. Attractive to bees.
