The Jerusalem artichoke (Helianthus tuberosus), also called sunroot, sunchoke, earth apple or topinambour, is a species of sunflower native to eastern North America, and found from eastern Canada and Maine west to North Dakota, and south to northern Florida and Texas. It is also cultivated widely across the temperate zone for its tuber, which is used as a root vegetable.
Tubers in image serve as examples. Tubers naturally vary in size anywhere from 2 1/2” inches to 3 1/2”inches.
It is a herbaceous perennial plant growing to 4'–9' Foot tall and produces beautiful 2"-3" inch yellow flowers.
Jerusalem artichokes have also been promoted as a healthy choice for diabetics because fructose is better tolerated by people that are diabetic.
Nutty flavor is excellent when used raw in salads or relish trays. Can be baked, broiled or fried as a tempting side dish. Highly nutritious, low in calories.
